Chocolate Cherry Snoballs

Ingredients:
1 c butter, softened
1/2 c powdered sugar
1/2 tsp almond extract
2 c all purpose flour
1/4 tsp salt
1 c (8 oz) maraschino cherries, finely chopped
1/2 powdered sugar (for rolling)
1/2 c dark chocolate chips

Heat oven to 400 degrees F. 
In a large bowl beat butter with an electric mixer on medium speed till smooth. 
Gradually beat in 1/2 cup powdered sugar until light and fluffy.
Stir in almond extract.

In a medium bowl mix together flour and salt.
On low speed, gradually beat in the flour mixture until well blended.
Stir in cherries.

Shape dough into 1" balls and place on an ungreased cookie sheet approx. 2" apart

Bake for 9-11 mins or until the edges start to turn to brown.
Cool slightly and roll around in the other 1/2 cup of powdered sugar.
Place on a cooling rack lined with foil and cool completely.

Put the chocolate chips into a small ziploc bag and microwave on high 45-60 seconds flipping the bag over at every 20 seconds.
Squeeze the bag until chips are melted and smooth.
Cut a small tip off one corner of the bag and drizzle the melted chocolate over the cooled cookies.
Let stand at room temp at least 30 minutes until the chocolate hardens before storing.

~Nutholes~

~2 egg whites beaten until foamy.
~Add a pinch of salt.
~Gradually add 3/4 cup sugar.
~Add 1 tsp vanilla.
~Beat until stiff peaks form.
~Fold in 1 cup chopped nuts and 6 ounces chocolate chips.
~Drop by spoonful on cookie sheet lined with foil.
~Heat oven to 350 F
~Put cookies in and turn oven off.
~Take cookies out next morning.

~Easy Quesadillas~

Prep Time : 15 min
Cook Time : 8 min

Cost per serving : approximately $1.55

Here's an easy way to make several quesadillas at a time. Bake them all together in a hot oven instead of preparing one at a time in a skillet.

You'll need : 

8 flour tortillas
2 cups shredded cheddar cheese (8 ounces)
1 cup fresh corn kernels (cut from 2 medium sized cobs)
2 medium sized tomatoes (thinly sliced)
1 jar (12 ounces) roasted peppers (drained and cut in quarters)

Directions :

~Heat oven to 450 F. Lightly grease 2 jelly roll pans or cookie sheets.
~Arrange 2 tortillas on each pan. Sprinkle each with 1/4 cup cheese (keeping cheese about 1/2 inch from edges of tortilla) Top all 4 with 1/4 cup corn, 2 or 3 slices of tomato and red pepper and remaining cheese. Place remaining tortillas on top.
~Bake quesadillas 6 to 8 minutes (until golden brown and cheese is melting)
~Cut each into 4 wedges and serve,

Spicy Pumpkin Pancakes with Cinnamon Syrup

Pancakes-

2 c flour
1 tbsp sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp allspice
1 tsp cinnamon
1/2 tsp ginger
1/2 tsp salt 
2 tsp vanilla
2 eggs
1 1/4 c buttermilk
2 tbsp canola oil
1 c pumpkin puree (NOT PIE FILLING)

In a large bowl whisk together all flour, sugar, baking powder, baking soda and spices. Add vanilla, eggs, oil, buttermilk and pumpkin. Mix well with a wooden spoon. Cook like you would any other pancake.
Makes 10-12 pancakes

Cinnamon Syrup-
 1 c sugar
1 c buttermilk
1/2 c butter
2 tbsp light corn syrup
1 tsp baking powder
1 tsp cinnamon
2 tsp vanilla

Add all ingredients, except vanilla, to a large saucepan. Bring to a boil. WATCH CONSTANTLY!!! Cook for about 5-6 minutes. Remove from heat, add vanilla. 

Will harden when refrigerated, but can be microwaved

Pumpkin Cinnamon Rolls with Caramel Frosting

Cinnamon Rolls -

1/3 c milk
2 tbsp butter
1/2 c pumpkin puree (NOT PIE FILLING)
2 tbsp sugar
1/4 tsp nutmeg
1 tbsp pumpkin pie spice
1/2 tsp salt
1 egg (beaten)
1 (1/4 oz) pckg yeast
2 c bread flour
1/2 c brown sugar (packed)
2 tbsp melted butter
2 tsp ground cinnamon

In a small saucepan, heat milk and butter until just warm and butter is almost melted, stirring constantly

In a large mixing bowl combine pumpkin, sugar, nutmeg, salt and pie spice. Add milk mixture and beat with an electric mixer until well mixed. Beat in egg and yeast

Add half of the flour to the pumpkin mixture. Beat on a low speed for 5 minutes scraping the sides of the bowl frequently. Add remaining flour and mix thoroughly (dough will be very soft). Turn into a lightly greased bowl then lightly grease the surface of the dough

Cover and stand in a warm place until doubled in size (about 1 hr). Punch down the dough

Turn out the dough onto a lightly floured surface. Knead the dough a few turns to form a smooth dough, sprinkling with enough additional flour to the dough easy enough to handle. Roll the dough into a 12x10" rectangle.

In a small bowl combine brown sugar and cinnamon. Brush the surface of the dough with the melted butter. Spread the brown sugar mixture completely over the dough so that you are pushing any excess off the all the edges (there should not be hardly any dough showing, especially around the edges)

Beginning on the longest side of the dough, roll up jelly roll style (for larger fatter cinnamon rolls start rolling from the shortest side of the dough). Pinch the seam to seal. With a sharp knife cut 12 or so 1" pieces. Place the rolls, cut side up, into a greased 11x7" pan (a 13x9" would also be acceptable). Cover and let rise for a second time, till the rolls are nearly doubled in size (about 35-40 minutes)

Bake rolls @ 350 degrees F about 15-20 minutes or until golden brown. Move from pan to wax paper or a cooling rack and let cool for 10-15 minutes. 

Drizzle with the caramel frosting


Caramel Frosting-

1/4 c butter
1/2 brown sugar (packed)
2 tbsp milk
1/4 tsp vanilla
1/4 tsp pumpkin pie spice
a dash of salt
3/4 c powdered sugar

In a small saucepan heat butter until melted. Stir in the brown sugar and milk. Cook over medium heat for about 1 minute

Transfer to a small mixing bowl and cool. Stir in vanilla, pie spice, salt and powdered sugar. Beat with an electric mixer until well blended

Drizzle over cinnamon rolls

Sloppy Grilled Cheese

I found this recipe on Pinterest (thanks Kellie!) and it needed all this stuff that don't really like, such as green and red peppers. So, I took the idea and made my own. 

It only took about 20 minutes to make and the kids didn't leave 1 crumb on their plates, HAHA



Sloppy Grilled Cheese

1 can of Manwich Sloppy Joe Sauce
1 lb. ground chuck
1/2 an onion, chopped
shredded sharp cheddar cheese
sliced bread
butter or margarine

First, brown up your ground chuck with the chopped onion. 
Prepare Manwich with the beef as it says on the can (I only used about 2/3 of the can so it wouldn't be so messy)
Set to the side.
Heat your pan on medium high, and while it's heating up butter all of your bread. 
Put your bread in the hot pan (if it's not sizzling, then you put it on too early) 
 Put on 2 TBSP of cheese, 3 TBSP of Sloppy Joe meat, and then 2 more TBSP of cheese. Top with another slice of bread. 
Fry in the pan until both sides are golden brown, and 
VIOLA!!!!!

Roasted Shrimp & Broccoli


Roasted Shrimp & Broccoli

♥Ingredients♥
2 lbs. of broccoli florets
1 lb of shelled and deveined large shrimp
4 tbsp of olive oil
1 tsp of coriander seeds 
1 tsp whole cumin seeds
1 1/2 tsp salt
1 tsp pepper
1/8 tsp hot chili powder
lemon zest (from one lemon)


♥Directions♥
1. Heat oven to 425 degrees.

2. On a large cookie sheet, toss together broccoli florets , 2 tbs olive oil, 1 teaspoon whole coriander seeds , 1 teaspoon whole cumin seeds, 1 tsp salt, 1/2 tsp pepper and 1/8th tsp hot chili powder. Spread into a single layer and pop into the oven for 10 minutes.

3. Meanwhile, toss together shrimp with 2 tbs olive oil, lemon zest, 1/2 tsp salt and 1/2 tsp pepper in a bowl. When the broccoli’s been in the oven 10 minutes, add the shrimp to the broccoli and toss carefully.

4. Roast another 10 minutes, tossing once halfway through, until the broccoli is tender.

Viola!

Serve as is or on a bed of rice and enjoy!  ♥

Four Cheese Broccoli Pizza

4 Cheese Broccoli Pizza



♥Ingredients♥
4 tbsp of extra virgin olive oil
1 lb of pizza dough
1/4 cup of grated Parmesan cheese
3/4 lb of sliced Provolone cheese
12 ounces of broccoli florets
1/3 cup of Ricotta cheese
1/2 cup of Mozzarella cheese
garlic powder
salt
oregano

♥Directions♥
1. Preheat oven to 425 degrees.

2. Roll out dough. Coat pizza pan with the olive oil and spread out rolled dough evenly to all edges of pan. 

3. Sprinkle with grated Parmesan cheese. 

4. Top with sliced provolone then place steamed broccoli florets on top of Provolone. 

5. Using two teaspoons, spoon about 3/4 teaspoonful size spoonfuls of ricotta sporadically around the broccoli areas in empty spots. 

6. Season whole pizza with salt, oregano & garlic powder to taste then sprinkle the shredded mozzarella evenly all over pizza.

7. Bake for 12-18 minutes or until crust is golden brown. 

Slice, serve, and enjoy!♥

Caribbean Jerk Chicken


Get yourself a bottle of Caribbean Jerk 30 min marinade...I just used the Kroger store brand

10 boneless/skinless chicken thighs

veggie or side of choice

Put the chicken in a bowl and poke the crap out of it. Pour the marinade in and coat well. Let sit for about 45 mins to and hour.

Lay each piece out in a 13x9 in baking dish and pour the marinade over the top. Cover with foil.

Bake in a preheated 350 degree oven for about an hour.

Serve with veggie or side and enjoy!!


Sausage Pie (Quiche)


Ingredients

2 9 inch frozen pie shells
1 lb. bulk sausage
1/2 onion chopped
1/2 tsp. oregano
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1/2 cup milk
4 eggs, beaten
8 oz. tomato sauce
salt & pepper

Preheat oven to 425 degrees. Brown your sausage and onion together, and while it's browning prick the  bottom and sides of each pie shell. 
Bake in the oven for 5 minutes, remove and let cool. 
Mix together eggs, milk, seasonings, and 2/3 cup cheddar and 1/2 mozzarella in large bowl. 
When sausage onion mix is done, drain and add to the egg mixture. 
Spoon evenly into both pie shells. 
Bake in the oven for 30 minutes or until filling is set. 
Split the tomato sauce and cover the top of each pie, spreading over them evenly. 
Top with remaining cheeses and bake in the oven 4-6 minutes until cheese is nice and melted. 

Let set 10 minutes, so the pie can settle, and EAT! :D

Baked Lemon Pepper Tilapia


Baked Lemon Pepper Tilapia

♥Ingredients♥
4-5 Pieces of Tilapia
Lemon Pepper Seasoning
1 Tbsp Butter
2 Tbsp Lemon Juice


♥Directions♥
1. Spray your baking dish with non-stick spray. Place the Tilapia in the dish.

2. Sprinkle with lemon pepper seasoning. The amount used will be according to your taste.

3. Add dabs of butter on top of each piece of fish.

4. Pour lemon juice around each piece of fish.

5. Bake at 375 degrees for 10-15 minutes or until your Tilapia flakes done.

Cool, eat and enjoy!  ♥

Pineapple Chicken



1 (14.25 ounce can) sliced pineapple
1 garlic clove, pressed
1 (tablespoon) cornstarch
2 (teaspoon) Worcestershire sauce
2 (teaspoon) Dijon mustard
4 (5-6 ounce) boneless skinless chicken breasts
(small) lemon, thinly sliced

1. Preheat oven to 375 degrees. 

2. Drain pineapple, reserving juice.

3. Combine juice with garlic, cornstarch, Worcestershire sauce, and mustard to make sauce.

 4. Arrange chicken in a shallow 9 x 13 inch baking dish. 

5. Stir the sauce and pour over the chicken. 

6. Bake covered at 375 degrees for about 25 minutes, depending on thickness of chicken. 

7. Arrange pineapple and thin lemon slices on top of chicken, baste with the sauce in pan and continue baking 5 minutes longer uncovered.

Italian Mozzarella Stuffed Meatloaf



This is my husbands favorite recipe. He requests it on a monthly basis, and I make it quite often! :) It's very easy to make, and super, super yummy. We usually serve it with a salad and garlic bread. 

Ingredients
2 lb ground chuck
1 egg
1 jar of spaghetti sauce 
1 1/2 cups mozzarella cheese
2/3 cup of bread crumbs
salt 
pepper


Preheat your oven to 400 degrees. 
Mix together 1/3 cup of the jarred spaghetti sauce, ground chuck, salt & pepper (I didn't put much, since hubby has hypertension), the egg, and bread crumbs. 
Smush together with clean hands until well blended. 
Lay flat in a casserole dish, but make sure there are no holes in the meat as you flatten. Holes will cause the cheese to leak out and harden.
sprinkle 1 cup of cheese down the middle of the meat. 
Press in the ends and roll up like you would a jelly roll.
(You can use THIS picture as reference on how to roll it) 

Shape into a loaf and top with 1/2 of the left over sauce. 
Bake in the oven for 40 minutes, then take out and drain off grease. Top with remaining spaghetti sauce, and cheese. 

Bake for 30 more minutes, and then it's DONE! :)

Crockpot Breakfast Casserole


6 eggs, beaten
1 lb. sausage
1 1/2 cups cheddar cheese, shredded
1 can of mushrooms, or 6 oz. fresh chopped mushrooms
1/2 cup milk 
1 bag frozen shredded hashbrowns
salt and pepper


Brown your sausage, drain. 
Lightly spray inside of crockpot with cooking spray. 
Cover bottom with shredded hashbrowns. 
Then, on top, layer some sausage, mushrooms, and cheese, repeat 2 or 3 times until hashbrowns are gone. salt and pepper the top. 
Mix the milk in with the beaten eggs, and pour over the top. 
Turn crockpot on low, and let cook over night on low for 10-12 hours.


We're having this, this morning, so I'll let you know how we liked it! :D 

**UPDATE** 
We just ate, and this was really good! It makes a lot, so we will be having it again tomorrow morning. My kids very rarely have seconds, but with this, they both asked if they could have more, LOL 
This was a big hit! We will definitely be making this a regular meal in our house!

Cheesy Chicken & Doritos Casserole



3 cups cooked chicken, chopped 
8 oz sour cream

1 can cream of mushroom soup

1 can cream of chicken soup

1 can Rotel
1 can of corn, drained
2 cups Mexican cheese, shredded
1 bag of nacho cheese Doritos



Preheat oven to 350 degrees.



Lightly spray a 9x13 pan with cooking spray.  

Crush the entire bag of Doritos and cover the bottom of the dish. 



Reserve one cup of cheese.   Mix together remaining ingredients in a large bow.  Pour chicken mixture over the Doritos. 
 Bake for 20 min. Top casserole with the remaining cheese and bake 5 additional minutes or until melted.

Beth's Chili



I had a craving for some chili, so I went online to look for recipes. Well, they were demanding all kinds of ingredients and almost made me give up. So here's a easy recipe that only needs a few ingredients, but tastes delicious. This is for a stove top chili, but I think it will work in a crock pot or slow cooker. This makes roughly 12 servings.

Ingredients:

2 pounds lean hamburger
48 ounces of tomato sauce
1 whole vidalia onion
2 whole green peppers
2 cans of red kidney beans
1 can of pinto beans
1 clove of fresh garlic (you only need 3 bulbs of it)
2 tablespoons of crushed red pepper
2 packets of chili seasoning

Directions

Brown the hamburger and drain the grease.
Chop onion and add to pot.
Remove seeds from green peppers and chop. Add to pot.
Drain the kidney and pinto beans and add to pot.
Finely chop the 3 bulbs of garlic and add to pot.
Add the tomato sauce.
Add the burger.
Add the crushed red pepper and the chili seasoning. Stir until well blended.
Get it to a boil. Then simmer with a lid for 6-8 hours stirring occasionally.
DO NOT WORRY. IT LOOKS LIKE THERE'S NOT ENOUGH SAUCE AT FIRST, BUT THERE IS.

Now this isn't a spicy chili. You can add more kick to it if your family enjoys a spicy chili. Or cut out the crushed red pepper if you want a really mild chili. This is a medium chili.

Serve steaming hot with shredded cheese, sour cream, chives, and oyster crackers if you wish! Nothing is better to curl up with than a nice big hot bowl of delicious chili!

White Chicken Enchiladas

I made these the other night, and my husband had 2 helpings! LOL I asked him what he wanted for dinner tonight (3 days later) and he said he wanted those 'enchilada thingies' again. These were a HUGE hit in our household!



10 soft taco shells
2 cups cooked, shredded or chopped chicken 
2 cups shredded mexican style or monterey jack cheese
3 Tbsp. Butter
3 Tbsp. Flour
2 cups prepared chicken bouillon  
8 oz. sour cream
1 4 oz. can of chopped green chilies 


Preheat oven to 350 degrees. grease 9 x13 (I used a 2 qt. dish because we have a 4 person family)


Mix chicken and 1 cup of cheese. Roll up in tortilla shells and place in pan. 


In sauce pan, melt butter. Stir in flour and cook until mixed together well and bubbling. Add broth and whisk in until smooth. Heat over medium high heat until thick and bubbly. Stir in sour cream and chilies.

DO NOT bring to a boil, sour cream will ruin if you boil this sauce.


 Pour sauce over rolled enchiladas and top with the remaining cheese. 


Bake 20 minutes, then broil 3 minutes to brown the cheese.

~Chicken Pot Pie~



Ingredients

(1) 2 pack of frozen deep dish pie shells
1 lb of boneless skinless chicken breast
1 can of peas and carrots
1 can of diced potatoes
1 can of cream of chicken soup

Preparation

preheat oven to 350
set frozen pie crusts on stove top to thaw
cook chicken thoroughly (boil/bake...up to you)
cool chicken then shred/cut up into bite size pieces
combine chicken, veggies & soup in a large bowl
mix thoroughly (I do this by hand...but its messy...LOL)
pour mixture into one pie crust
place the second pie crust on top
pinch edges with a fork to seal the pie
cut small slices in the top of the pie

Baking

bake at 350 for 45 min to 1 hour (until edges are browning)
let cool
slice and eat!

Double Chocolate Chip Cookies

Double Chocolate Chip Cookies 

♥Ingredients♥
1 cup butter
1 cup sugar
1/2 cup packed dark brown sugar
1 teaspoon vanilla extract
1 egg
1/3 cup baking cocoa
2 tablespoons milk
1 3/4 cups all-purpose flour
1/4 teaspoon baking powder
1 cup semisweet chocolate chips


♥Directions♥

1. In a large mixing bowl, cream the butter, sugar and vanilla. Beat in egg. Add cocoa and milk. Combine flour and baking powder; fold into creamed mixture with chocolate chips.

2. Roll teaspoonfuls of dough into balls; place 2 in. apart on ungreased baking sheets. Bake at 350 degrees F for 10-12 minutes. Cool for 5 minutes before removing from baking sheets.

Eat 'em as is or on top of your favorite ice cream. Enjoy!

Chicken or Veggie Quiche

This is a meal I came up with I love to make different things all the time This can be made Veggie Style or with Meat...


Pre heat Oven to 375


Approx 6 Med Potatoes Peeled and shredded ( cook in a pan in until soft and light golden color)  This is your Crust.  Once done place in a Pie Pan and work the tators up the sides.


If you are using Meat You would want to cook that at this time and place on top of the Tator Crust.


Veggies 
I used the following :
1/2 yellow Squash (crookneck)
1/2 Zucchini
1/2 Onion
1/2 green and red pepper julienned


Saute in pan until crisp / soft.  Place on top the Tator crust  add Cup/ cup 1/2 cheese ( any flavor you like)


6 eggs mix and pour over the veggies and tators


Cook for approx 35-40 Minutes until eggs are set.

George's Rice Pudding

This is a recipe my dad brought me up with. He used to make it as dessert, and it is sooo cheap to make and super yummy too!!



1 cup rice
1 cup sugar
2 cups half and half
1 cup raisins
1 tablespoon cinnamon
3 eggs
1 teaspoon nutmeg

1.Preheat oven to 325 degrees, cook rice and mix in raisins, set aside. 
2. beat together half and half, sugar, eggs, and cinnamon. 
3.Put all together in an 8 x 8 casserole dish, and bake for 30 minutes. 
4. Stir, sprinkle the top with nutmeg, bake for another 30 minutes. 
5. Cool and serve with your favorite ice cream! 

Reuben Egg Roll Wraps

This is one of my absolutely favorite foods! I have to cut myself off when I make them, or I will end up eating them until I give myself a stomach ache, LOL!

 Reuben Egg Rolls

1 1/2 cups, sauerkraut, drained
1 1/2 teaspoon, caraway seeds
6 oz. deli corned beef, cut into strips
4 oz. Swiss Cheese, cut into strips
1 teaspoon of lemon juice
1 egg, beaten with 1 Tablespoon of water
8-9 egg roll wrappers
mustard
1 cup vegetable oil
Thousand Island dressing (for dipping)

1.Saute sauerkraut and caraway seeds over medium-high heat, until most of the liquid is evaporated and kraut begins to brown. stir in lemon juice, set aside. 
2.Prepare egg wash and preheat oil to medium-high. 
3. Set egg roll wrapper in front of you with corner facing you, brush around edges with egg wash. 
Place 3 tablespoons of kraut, 2 strips of cheese, and 2 strips of corned beef. drizzle with a little bit of mustard. 
4. Fold up the side edges first, and then roll up like an egg roll, sealing on the ends. 
5. Fry on all sides until golden brown, drain,and serve with Thousand Island dressing!
